Pineapple-pink grapefruit-quince jam with vodka

Ingredients for 1 servings:

  • 500 g pineapple, prepared and weighed
  • 350 g grapefruit(s), (pink grapefruit) prepared weighed
  • 100 g quince(s), prepared and weighed
  • 2 limes, the juice
  • 500 g gelling sugar, 2:1
  • 50 ml vodka

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Peel the pineapple, remove the core, and cut into small cubes. Peel the grapefruit with a sharp knife, removing all the white parts, and fillet the fruit, reserving the juice. Peel the quince, remove the core, and cut the fruit into small cubes. Weigh the required quantities. Squeeze the limes and pour the juice into the weighed fruit. Bring the fruit and the preserving sugar to a boil, then simmer for 4 minutes. Add the vodka and simmer for another 4 minutes. Test for settling. Pour the jam into prepared jars, seal, and let stand with the lid on for 10 minutes.
