Bell peppers with meatballs and rice

Ingredients for 4 servings:

  • 3 bell peppers
  • 1 can tomatoes, chopped
  • 1 large onion(s)
  • 500 g minced beef
  • 250 ml water
  • 1 tsp vegetable stock powder
  • salt and pepper
  • Mustard
  • Oil for frying
  • 4 servings of rice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Season the ground meat with salt and pepper and form into small balls. Deseed and finely chop the bell peppers. Finely chop the onion. Sauté the onion with oil in a large pan. Add the bell peppers to the onions and sauté briefly. Add the canned tomatoes and deglaze with the water. Stir in the vegetable stock. Place the meatballs on top and simmer for 15-20 minutes. Finally, season with salt, pepper, and mustard. Meanwhile, cook the rice according to the package instructions.
