Ingredients for 4 servings:

  • 120 g lean smoked bacon
  • 2 onions
  • 3 tbsp vegetable fat
  • 6 large potatoes
  • 4 eggs
  • 200 ml milk
  • 1 bunch of parsley
  • 1 bunch of chives
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • 1 pinch of nutmeg
  • 120 g flour

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely dice the bacon, peel and finely dice the onions. Heat the fat in a large pan and fry the bacon. Add the onion and sweat until translucent. Peel and finely grate the potatoes, add them to the bacon and onions, and sauté. Season everything with salt, pepper, and grated nutmeg. Sauté over moderate heat for about 8 minutes. In a bowl, mix the flour with the eggs and milk to form a pancake batter. Stir in the finely chopped herbs and season with salt, pepper, and nutmeg. Place 1/4 of the potato mixture in a pan, spread 1/4 of the pancake batter on top, stir, and fry until golden brown on both sides, remove from the pan, and keep warm. Do the same with the remaining potato mixture and the pancake batter.
