Ingredients for 1 servings:

  • 500 g quark (low-fat quark)
  • 4 eggs
  • 1 packet of pudding powder (vanilla)
  • 2 tsp sweetener, liquid
  • 250 g berries, of your choice
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

for diabetics

Mix the quark with the eggs and sweetener. Stir in the pudding mix and pour half the mixture into a greased springform pan. Sprinkle with the trimmed fruit and cover with the remaining cheese mixture, smooth the surface, and bake at 160 degrees Celsius for 1 hour. Allow to cool in the pan before removing from the pan. Tip: Frozen fruit can also be used, but it will need to be drained in a sieve for several hours. The amount of ingredients can easily be doubled, as this cake is not only delicious for diabetics but also for calorie-conscious people.
