Berry jelly with tonka bean cream

Ingredients for 4 servings:

  • 200 g mixed berries (e.g. red currants, blueberries and raspberries)
  • 500 ml water
  • 2 tbsp sugar
  • lemon juice
  • 4 sheets of white gelatin
  • 200 ml cream
  • 1 tsp syrup (tonka bean syrup)
  • Berries
  • mint

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Simple, refreshing summer dessert

Soak and squeeze the gelatine. Boil water with 1 tablespoon of sugar, season with a few squeezes of lemon juice, and add the berries. Bring to a boil, then stir to dissolve the gelatine in the liquid. Divide the mixture among four glasses, let it cool, and refrigerate. Whip the cream with tonka bean syrup and 1 tablespoon of sugar until stiff, spoon over the jelly, garnish with berries and mint leaves, and serve. For a variation, mix the water with elderflower syrup and reduce the sugar accordingly. The cream can also be replaced with yogurt or quark for a more figure-friendly effect.
