Ingredients for 1 servings:

  • 100 g butter or margarine
  • 100 g flour
  • 100 g sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1 packet of vanilla sugar
  • Raspberries or mixed wild berries, fresh or frozen
  • possibly powdered sugar
  • possibly flavoring (lemon flavor)

a fruity variant for spring

Combine the softened butter or margarine with the other five ingredients in a bowl and beat with a whisk until light and fluffy (it’s best to mix the flour with the baking powder first and sift it in). Spoon the mixture into about 10 to 12 paper baking cups or a muffin tin. Add the berries, 3 to 4 at a time, and press them in lightly. It is not necessary to thaw frozen berries beforehand. Bake in a preheated oven at 180°C for about 15 minutes. If you want a special batter color, you can whisk the berries into the batter beforehand; these (especially blueberries) will then color the batter. For a fruitier flavor, you can also add a few drops of lemon flavoring. Powdered sugar is a great decoration.
