Berry-orange jam with marzipan and amaretto

Ingredients for 1 servings:

  • 750 g berries, mixed, frozen
  • 2 oranges
  • some orange zest
  • 75 g marzipan paste
  • 100 ml Amaretto
  • 2 cinnamon sticks
  • 4 star anise
  • 500 g gelling sugar 2:1
  • possibly almond flakes
  • possibly cinnamon

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 25 minutes

Christmas fruit spread, makes approx. 5 jars, 200 ml each

Place the berry mixture in a large saucepan and bring to a boil briefly to thaw. Peel the oranges and remove any white pith. Chop them finely and add them along with the orange zest, Amaretto, and finely diced marzipan. Add the cinnamon sticks and star anise and let everything steep for 1-2 hours. You can put the anise in a paper tea strainer to prevent crumbs from getting into the jam. Discard the spices and puree the mixture. Add the gelling sugar. Bring everything to a boil and simmer for 4 minutes, stirring well to prevent burning. Season to taste with more cinnamon and add toasted almond flakes. Test for set and pour everything into jars.
