Berry pizza with pistachios

Ingredients for 2 servings:

  • 400 g mixed berries
  • 75 g crème fraîche
  • 1 egg yolk, class M
  • 1 tsp cornstarch
  • 100 g sugar
  • 1 roll(s) of frozen pizza dough, 230 g
  • 50 g hazelnuts, chopped
  • 1 tbsp pistachios, chopped

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

For the mixed berries, hull the raspberries, strawberries, blackberries, blackcurrants, and redcurrants. Quarter the strawberries. Mix the crème fraîche with the egg yolk, cornstarch, and 50g of sugar. Place the pizza base on a baking sheet and spread with the cream. Top the base with fruit and sprinkle with hazelnuts. Bake the berry pizza in a preheated oven at 220°C (top/bottom heat) (gas mark 3-4, fan oven 200°C) on the lowest rack for 15 minutes. While the pizza is still hot, sprinkle with the remaining sugar and pistachios. For two servings, one serving has 421 kcal.
