Ingredients for 4 servings:
- 500 g strawberries or berries of your choice
- 125 ml juice of your choice (e.g. orange juice)
- 2 cl Amaretto or other liqueur
- 1 vanilla pod(s)
- 2 egg whites
- 1 pinch of salt
- 35 g powdered sugar
- 2 tbsp cornstarch
- 2 tbsp water
- 250 g quark
- 1 bag of vanilla sugar
- Fat for the mold
Instructions

Preheat the oven to 200°C (180°C fan-assisted oven). Rinse the berries or defrost frozen ones. Split open the vanilla pod, scrape out the seeds, and bring the seeds to a boil with the juice and liqueur. Mix the cornstarch with 2 tablespoons of water until smooth, add to the juice, and simmer for about 2 minutes. Remove the pan from the heat and add the berries. Mix the quark with the vanilla sugar until smooth. Beat the egg whites with salt until stiff, gradually adding the powdered sugar. Fold the beaten egg whites into the quark. Grease a baking dish, add the berries, and spread the quark mixture on top. Bake in the oven for about 10 minutes, until the surface is light golden brown. This dessert can be served hot or cold. It’s easy to prepare and can be refrigerated until ready to bake. Small soufflé dishes can be used instead of a large baking dish.
