Ingredients for 1 servings:

  • 1 pot of basil
  • 100 g herbs, e.g. wild garlic or parsley
  • 3 cloves garlic
  • 50 g pine nuts
  • n. B. vegetable oil
  • e.g. olive oil
  • some salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Quick and tasty pesto

Roast the pine nuts in a pan without fat, working in small batches at a time, until medium brown, then let cool. Roughly tear the herbs and place them in a blender. Add the garlic and pine nuts and blend everything with a little vegetable oil until smooth. Don’t add any olive oil at this point, as it will become bitter if you process it mechanically. Season the mixture with a little salt and transfer it to a sealable jar. Now add a little more olive oil to the jar so that the olive oil seals the pesto airtight. Every time you take some out, make sure there’s a thin layer of olive oil on the pesto; this will keep for weeks!
