Betty's fillet steaks with pepper hollandaise

Ingredients for 4 servings:

  • 4 beef fillet steaks (approx. 150g each)
  • 2 tbsp oil
  • 200 g butter
  • 2 egg yolks
  • 3 tbsp white wine
  • 1 tbsp lemon juice
  • 2 tbsp peppercorns, green, pickled

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wash the steaks and pat dry. Heat oil in a pan and fry the steaks for about 3-4 minutes on each side. Season with salt and pepper and keep warm. For the hollandaise sauce, briefly boil the butter in a saucepan and skim off any foam. Place the egg yolks and wine in a metal bowl and beat over a pan of simmering water until thick and foamy. Add the melted butter a little at a time, stirring constantly. Season the sauce with lemon juice, salt, and pepper. Stir in the green peppercorns. Serve the steaks with a little sauce. Serve the remaining sauce separately. Croquettes and cauliflower with broccoli go well with this dish. I often make this dish with pork fillet steaks, as they are more cost-effective.
