Bibiliskäs with potatoes

Ingredients for 2 servings:

  • 500 g layered cheese
  • 150 ml cream
  • 100 g sour cream
  • 1 bunch of chives
  • 1 onion(s)
  • salt and pepper
  • 1 kg potatoes

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours 45 minutes

Combine the layered cheese, cream, and sour cream in a bowl. Finely chop the chives and finely dice the onions. Mix everything together and season with salt and pepper as desired. Refrigerate the finished Bibiliskäs for a good 3 hours, but this isn’t necessary. It’s delicious just the way it is. Boil the potatoes in salted water for about 30 minutes. Serve together. Bibiliskäs also goes great with fresh farmhouse bread. Perfect in the hot season.
