Ingredients for 4 servings:
- 500 g minced beef
- 3 egg yolks
- 3 tbsp onion(s)
- 2 tbsp beetroot
- 2 tbsp beetroot juice
- 1 tsp, leveled salt
- 1 tsp, levelled pepper, black
- 1 tbsp citrus fiber paste (basic texture)
- 2 tbsp rapeseed oil for frying
- 8 potatoes, boiled
- 6 tbsp butter
- 1 tsp, leveled salt
- 2 apples, sour
- 1 tsp vinegar
- 2 tbsp mayonnaise
- 1 tsp apple syrup (apple sweetener, basic sweet)
- 2 tsp horseradish, freshly grated
- 4 tbsp, heaped beetroot, finely diced
- 4 eggs
- 1 tbsp chives
Instructions
Working time approx. 40 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes
For the minced meat, cut the onions and beetroot into 4 mm cubes. Vigorously mix the minced meat with the onions, beetroot, beetroot juice, egg yolks, citrus fiber paste, salt, and pepper. Tip: For minced meat without bread, a citrus fiber paste provides the necessary pliability, juiciness, and fluffiness! Divide the minced meat into 4 equal portions. Form them into flat “burger patties.” Heat the fat in a pan until very hot and sear the patties on both sides. Then place them in the oven at 80°C for a final finish. Meanwhile, for the rösti, coarsely grate the cooked potatoes, carefully mix with salt, and form into rösti. Place a pan with butter over medium heat and carefully add the rösti. Tip: Ideally, the pan should be the same size as the rösti. Fry over moderate heat to combine the coarse potato strips, creating a crispy texture on the outside and a fluffy interior. Carefully flip and repeat on the other side. While the hash browns are cooking, prepare the beetroot, apple, and horseradish salad. Grate the apples and beets on a coarse grater. Mix the mayonnaise with the vinegar, add fresh horseradish, salt, pepper, and apple cider vinegar, and stir everything together. Mix with the grated apples and beets. Season to taste. Now fry the fried eggs in a pan. Remove the hash browns from the pan and place them on plates. Remove the meatballs from the oven and place them on top of the hash browns. Place a fried egg on each patty and garnish with chives. Finally, arrange the salad on the plates and serve.
