Ingredients
 

Buns

  • 170 g Frozen spinach leaves
  • 0,5 Sachets Dry yeast
  • 1 tsp Sugar
  • 250 g Flour
  • 0,5 tsp Salt
  • 1,5 tbsp Oil

Roasted Bell Pepper Sauce

  • 2 size Red peppers
  • 1 -2 Stück Jalapeño pods
  • 1 size Onion
  • 2 tbsp Oil
  • 3 Toes Garlic
  • 2 tsp Sugar
  • 1 tsp each Pepper and coriander grains
  • 1 tsp Paprika powder
  • 1 Can (~ 400g) Chopped tomatoes
  • 1 Can (~ 400g) Salt
  • 2 tbsp Lemon juice

Patty

  • 265 g Cooked chickpeas
  • 2 tbsp Water
  • 1 size Onion
  • 3 Toes Garlic
  • 1 tsp each Salt, paprika, coriander, marjoram
  • 0,5 tsp Freshly ground pepper
  • 100 g Chickpea flour
  • 100 g Sesame seeds, onion seeds

Cheese chip

  • 75 g Grana Padano
  • 0,5 tsp each Garlic powder, oregano

roasted onions

  • 3 size Onions
  • 2 tbsp Oil
  • 2 tbsp Salt pepper
  • 2 tbsp Balsamic rosso

Preface

  • My very favorite neighbors are really great people! Warm, open-minded, helpful and just lovable. Before they knew my husband and me, they had nothing to do with vegetarian and .. God forbid .. vegan food. At first they were also very skeptical when I offered them something, but they quickly realized that food without meat can also be very tasty and they now like to pretend .. and completely selfless ???? .. available as a test eater. My vegetarian / vegan burger creations are particularly popular. However, my neighbor (Alex) said here and there that he could have eaten a second one. So I ... with the agreement of his wife Evi ... made a big burger and dedicated it to Alex. You can see the result here:

The buns:

  • Let the spinach thaw, puree and work with the other ingredients to form a dough. If the dough is too moist, add a little flour. If it is too dry, add some water. In the end, the dough should be nice and soft, elastic and pliable and not sticky.
  • Now cover the dough and let it rise for 4 hours.
  • Form two flat slices of approx. 18-20cm and place on a baking tray with a baking sheet. Brush the dough with water and sprinkle on the sesame and onion seeds. Let the rolls rise again for about 30-45 minutes and then bake at 180 ° top / bottom heat for 20 minutes.

The Roasted Bell Pepper Sauce:

  • Roasted peppers are delicious! Roasting gives them a wonderful sweetness and a great aroma.
  • First wash the peppers, clean them and cut them into segments, then place them with the pulp facing down on a baking sheet with a mat. Add the washed jalapenos and cook in the oven at 180 ° top / bottom heat until the flesh is soft (approx. 12 minutes). Remove, let cool and peel off the skin.
  • Roast the pepper and coriander grains without fat until they smell fragrant, let them cool down a bit and do not use a very fine mortar.
  • Dice the onion and fry in oil until it starts to turn color. Peel the garlic, remove the seedling and finely slice it. Add to the onions and fry until the garlic takes on color.
  • Add the sugar, let it melt and then mix in the spices.
  • Add the chopped tomatoes, cut up the roasted peppers and jalapeno, mix in and puree everything.
  • Let the sauce simmer a little (about 10 minutes with the lid tilted), season with salt and lemon juice and simmer for another 3-4 minutes.
  • You can pour part of the sauce hot into a small screw-top jar and close it. So you have the sauce in stock. It also goes very well with nachos.

The Pattys:

  • Drain the chickpeas and puree with 2 tablespoons of water.
  • Finely chop the onion, press the garlic through the press.
  • Mix all ingredients except for the chickpea flour and season to taste, only then add the chickpea flour.
  • The mass can be prepared very well and allowed to permeate.
  • Shape two meatballs the same size as the buns and fry them slowly in oil.

The fried onions:

  • Quarter the onions and cut into strips that are not too wide. Fry in oil until they are well colored, season with salt and pepper and deglaze with a little balsamic vinegar. Reduce the liquid.

The cheese chips:

  • Not a must (without the burger would be vegan) but a little gimmick is nice. ????
  • Mix the ingredients and form two slices the size of a baking sheet with a mat. Let it melt at 170 ° O / U for about 5 minutes.

Assembly:

  • Salad (e.g. iceberg, spinach, lamb's lettuce, lollo rosso ...) clean, wash and spin dry. Cut larger leaves into small pieces.
  • Cut tomatoes into slices.
  • Cut open the bun. Put plenty of sauce on the lower half and spread the salad on top. Line the surface with tomatoes, put on the patty, cheese chip and fried onions, put on the lid and serve.
  • I think my neighbor was very happy. ????
