Ingredients for 4 servings:
- 300 g white bread, stale bread or rolls
- 5 tbsp sugar
- ¾ liter of milk
- 5 eggs
- 10 tbsp semolina, coarse or rice flour
- 4 sausages (cooked sausage or Mettenden)
- 2 tbsp butter, melted
- 1 tsp baking soda
- 1 pinch of cardamom
- Breadcrumbs for the mold
- Butter for the mold
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the white bread into small cubes and let it soften in the lukewarm milk. Whisk the eggs and fold in well. Add the remaining ingredients. Let stand and let the flour (or semolina) swell. Pour a quarter into a greased pudding dish (previously dusted with breadcrumbs), then layer the sausages with the batter. Cook for 1 1/2 hours in a gently simmering water bath. Let stand, then turn out. Slice, serve hot, and serve with hot morello cherries or gooseberry sauce. Leftovers can be pan-fried.
