Ingredients for 4 servings:
- 250 g potatoes
- 2 m.-sized apples
- 50 g smoked bacon, streaky, diced
- 250 g wine sauerkraut
- 1 medium-sized onion(s), diced
- 8 allspice berries
- 8 juniper berries
- 1 tsp peppercorns, colored
- 1 bay leaf
- 750 ml beef broth
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Peel and slice the potatoes. Soak the slices in water until ready to use to prevent them from browning. Core the apples. Peel and slice the apples, and soak them in lemon water. Sauté the onions and bacon cubes. Crush the spices and place them in a spice bag. Squeeze out the sauerkraut and layer them in a pot with the onions, bacon, apples, and potatoes. The top layer should be sauerkraut. Place the spice bag between the layers and pour in the beef broth. Cover and simmer for about 60 minutes. Arrange in deep plates and serve.
