Ingredients for 4 servings:
- 350 g pasta
- 2 balls of mozzarella
- 6 tomatoes, ripe and firm
- 100 g mascarpone
- 100 g yogurt
- 3 tbsp mayonnaise
- 1 dashes lemon juice
- 2 tbsp oil
- 1 bunch of basil
- salt and pepper
- Spring onions or red onions
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes
Add the pasta to boiling salted water and cook until tender. Drain in a colander. Cool under cold running water. In a bowl, combine the mascarpone, yogurt, mayonnaise, oil, lemon juice, salt, and pepper. It can be a bit runny, as the pasta will absorb the sauce well. Finely dice the mozzarella and tomatoes, and chop the basil. Mix all ingredients together. If you like it spicy, add onions, if desired. Season to taste. Refrigerate until ready to serve. At least one hour, preferably two hours, or overnight.
