Ingredients for 4 servings:

  • 1 kg beef, lean, thinly sliced
  • 2 garlic cloves
  • 3 large onions
  • 1 cup water
  • Soy sauce
  • salt and pepper
  • 4 tbsp oil for frying
  • 2 lemons, juice
  • 8 tbsp soy sauce, savory
  • pepper
  • 4 tbsp oil

Filipino dish with beef

Cut the onions into rings and the garlic cloves into thin slices. In a bowl, combine the meat with lemon juice, soy sauce, oil, and pepper, and marinate in the refrigerator for about 30 minutes. Then squeeze some water out of the meat and remove it. Save the marinade. Fry the meat well in oil in a deep pan. Since the meat is not meant to simmer, but to fry, any juices that run out must be skimmed off. It’s best to add them to the marinade, as you’ll need them later. Continue frying the meat for about 5 to 8 minutes, adding a little oil if necessary. Once it has browned, remove the meat from the pan and set aside. Lightly brown the onion rings in the same pan, then remove them. Brown the garlic slices in the pan, mashing them with a wooden spoon. Add the meat and mix with the garlic. Now add the marinade with the meat juices and the water. Bring everything to a boil and simmer with the lid on over medium heat for 40 to 50 minutes, until the meat is tender and the liquid has reduced. Season the meat with salt and pepper. If you prefer more sauce, simply add a little more soy sauce and water, and season the dish with lemon juice and pepper. Finally, add the fried onion rings and let them cook briefly.
