- 6 bitter oranges, juice of all and zest of 1/2 to 3/4 of the orange
- 3 orange(s), filleted, and the resulting juice
- 450 g sugar

The most delicious orange marmalade in the world
Bring both juices to a boil with the zest, orange segments, and sugar and simmer for about 15 minutes. Then let stand, perhaps overnight. Then simmer for another 30-45 minutes until the jam begins to set slightly. Pour into jars and enjoy. Makes about 3 jars.
