Ingredients for 1 servings:

  • 500 g apricot(s), dried
  • 1 orange(s), peel and juice
  • 1 lemon(s), zest and juice
  • 1 can of pineapple
  • 500 g sugar, maybe a little more

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 30 minutes

Cut the apricots into small pieces. Pour the juice of the lemon, orange, and pineapple over the apricots. Finely chop the lemon and orange peels and add them. If the fruit is not covered by the juice, add water. Let stand overnight. Weigh the fruit puree and add the correct amount of sugar (400 g sugar to 500 g fruit puree). Bring to a boil, stirring occasionally. Cut the pineapple into small pieces, add them, and simmer until the jam thickens. Pour the hot jam into prepared jars and seal them airtight.
