Black bean and avocado salad with yogurt and mustard dressing

Ingredients for 2 servings:

  • 250 g beans, black
  • ½ avocado(s)
  • 2 tbsp cress
  • 50 g yogurt
  • 1 tsp linseed oil
  • 1 tbsp mustard
  • some lime juice
  • salt and pepper
  • Cress for garnishing

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Halve and pit the avocado. Scoop out the flesh and dice it finely. Combine the beans and the avocado cubes. Prepare the dressing by whisking all the ingredients together. Pour the dressing over the bean mixture. Finally, sprinkle with cress.
