Carrot-mango salad with carrot juice dressing

Ingredients for 4 servings:

  • 4 large carrots
  • 100 g mango pulp
  • 100 ml carrot juice
  • 50 ml orange juice
  • 1 dashes lime juice
  • 1 tbsp linseed oil
  • salt and pepper
  • Parsley, chives or cress

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine diced mango and grated carrot. Prepare the dressing by whisking everything together. Add the dressing to the carrot mixture. Mix well and serve, garnished with chives, chopped parsley, or cress.
