Black Bean and Quinoa Salad

  • 2 tablespoon Wild mango balsamic vinegar
  • 2 tablespoon Jalapeno oil
  • 4 tablespoon Extra virgin olive oil

  • 4 tablespoon Quinoa red
  • 1 Can 400 grams Black beans
  • 2 Spring onions
  • 1 Mango
  • 1 Yellow peppers
  • 1 Clove of garlic
  • 1 teaspoon Paprika powder (smoked)
  • Mexican spices from the mill
  • 1 Handful Coriander leaves
  • 3 small Tomatoes
  • 150 g Manchego cheese

  1. Whisk the ingredients for the dressing with a whisk and set aside.

  1. Cook the quinoa according to the instructions on the packet. Drain the beans over a sieve, rinse them thoroughly under running water and let them drain. Cut the spring onions into rings and chop the garlic. Peel, core and dice the mango. Core and dice the peppers and dice the tomatoes.
