Salad: Colorful Black Bean Salad

* for the dressing
- Water
- 2 Red pointed peppers
- 1 Onion
- 1 Carrot
- 0,5 Can Corn grains
- 150 g Feta
- 1 tbsp Chopped parsley
- 75 g Yogurt
- 75 g Mayonnaise
- 1 tbsp Lemon juice
- 1 tbsp Olive oil
- Salt
- Put the beans in a bowl or something similar, cover with water and let stand overnight.
- The next day, put the beans in a saucepan, cover with fresh water and cook for approx. 1-1.5 hours (depending on the variety) until soft.
- Peel the bell peppers, remove the seeds and membranes and cut into small pieces. Peel and chop the onion. Peel the carrot and slice or grate very finely.
- Drain the corn. Cut the feta into small cubes.
- Mix the cold, drained beans with the other ingredients.
- For the dressing, mix all the appropriate ingredients together and season to taste. Then mix with the salad.
- Let it steep in the refrigerator for at least 30 minutes.
