Salad: Colorful Black Bean Salad

The perfect salad: colorful black bean salad recipe with a picture and simple step-by-step instructions.

* for the dressing

  • Water
  • 2 Red pointed peppers
  • 1 Onion
  • 1 Carrot
  • 0,5 Can Corn grains
  • 150 g Feta
  • 1 tbsp Chopped parsley
  • 75 g Yogurt
  • 75 g Mayonnaise
  • 1 tbsp Lemon juice
  • 1 tbsp Olive oil
  • Salt
  1. Put the beans in a bowl or something similar, cover with water and let stand overnight.
  1. The next day, put the beans in a saucepan, cover with fresh water and cook for approx. 1-1.5 hours (depending on the variety) until soft.
  1. Peel the bell peppers, remove the seeds and membranes and cut into small pieces. Peel and chop the onion. Peel the carrot and slice or grate very finely.
  1. Drain the corn. Cut the feta into small cubes.
  1. Mix the cold, drained beans with the other ingredients.
  1. For the dressing, mix all the appropriate ingredients together and season to taste. Then mix with the salad.
  1. Let it steep in the refrigerator for at least 30 minutes.
