Black bread dumplings

Ingredients for 4 servings:

  • 200 g spelt flour, fine
  • 1 egg yolk
  • 2 tbsp cream
  • 100 ml water
  • 25 ml cream
  • 250 g bread(s) (brown bread/farmer’s bread)
  • 1 small onion(s), finely diced
  • 1 tsp butter
  • 1 tbsp parsley, chopped
  • 1 pinch(s) of salt and pepper
  • 1 pinch of marjoram, dried
  • 1 pinch of caraway, ground

hearty and spicy dumplings – taste great with creamy vegetables

Mix the flour, egg yolk, water, and cream. Heat the butter in a small pan and sauté the diced onion until translucent. Let cool. Mix the bread cubes, diced onion, parsley, salt, pepper, marjoram, and caraway seeds into the dough (do not knead). Cover and let rest for about 15 minutes. Form a small test dumpling and add it to the boiling salted water. If the dumpling doesn’t hold together, stir a little more spelt flour into the dumpling dough. Form dumplings with wet hands (or use two wet tablespoons to form dumplings). First, press the dumplings together firmly, then roll them into rounds between your hands. Place them in the boiling salted water and let stand uncovered for 30 minutes. Serve with creamed vegetables. Tip: If you’re not following a food combining diet, simply use 1 whole egg and 125 ml of milk instead of the egg yolk, water, and cream.
