Black Cherry Jam with Cardamom & Star Anise

The perfect black cherry jam with cardamom & star anise recipe with a picture and simple step-by-step instructions.

  • 1000 g Black cherries, pitted
  • 0,5 tsp Cardamom, just the fruit
  • 6 piece Star anise
  • 500 g Preserving sugar 2: 1
  • 1 packet Citric acid
  1. Mix the black cherries with sugar, citric acid and cardamom and then finely puree. Add the star anise and let the juice steep overnight.
  2. Then bring the mixture to the boil and simmer until the gelation point is reached, do not forget to stir so that it does not set. Put something on a plate to test the gelation.
  3. Remove the foam that occurs with a spoon, divide the star anise into 1 glass each and then pour the hot mixture into prepared glasses.
  4. Make the edges of the jars clean and close with the lid, then turn them upside down for a good 5 minutes so that they are vacuum-drawn, then turn over and let them cool.
  5. 5th mass makes 7 glasses of 220 ml each.
