Black Forest Cherry Brownies

Ingredients for 1 servings:

  • 250 g butter
  • 2 tbsp oil
  • 250 g sugar
  • 200 g brown sugar
  • 4 eggs
  • 1 pinch of salt
  • 130 g flour
  • 100 g cocoa powder, unsweetened
  • 1 cream
  • 50 ml cherry juice, from the jar cherries
  • ½ jar cherry(s) (morello cherries)
  • 1 shot of rum or kirsch
  • n. B. Chocolate shavings

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Put half a jar of cherries with liquid into a saucepan and add a good shot of rum. Let it reduce slightly and then remove from the heat. Now you can preheat the oven to 180°C (fan oven). For the batter, first mix the butter, eggs, oil and sugar and beat until lightly creamed. Then gradually add the flour, cherry juice and cocoa powder. Finally, add the cherries (without the liquid from the pan, reserving some for decoration) and spread them out evenly. You should line the pan with baking paper so that you can remove the brownies immediately after baking and they don’t continue to cook. You don’t want them to get dry. Then pour the brownie batter into the pan and place the mixture in the oven for about 22-25 minutes. As soon as the brownie is done, take it out and out of the pan and brush it with the liquid from the cooked cherries. Now you can also whip the cream. We always add just a pinch of sugar. Once the brownie has completely cooled, you can spread the whipped cream on top and garnish with some decorative cherries. Then add some grated chocolate, and your Black Forest Cherry Brownies are ready. This makes about 16 pieces.
