Ingredients for 2 servings:
- 1 onion(s)
- sugar, brown
- Balsamic vinegar
- Wine, red
- Clarified butter
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Finely slice 1 onion, sauté in clarified butter, then add brown sugar and let it caramelize. Deglaze with a little balsamic vinegar, reduce, then add a splash of red wine and reduce again. Season with salt and pepper (you may want to add more balsamic or red wine). Once the onions have a nice dark color, let them cool. After frying the steak, I added them to the pan and deglazed it with a little more red wine.
