Black radish with liver sausage

Ingredients for 3 servings:

  • 1 radish(s), black
  • 1 shallot(s)
  • 3 tbsp herb vinegar
  • 6 tbsp sunflower oil
  • salt and pepper
  • Chives or parsley
  • 6 slices of rye bread
  • 500 g liver sausage (farmer’s liver sausage)

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Snack for the gentlemen’s evening, rustic dinner, spicy winter salad

Black radish is spicier than the well-known white long beer radish and is mainly available in late autumn and winter. Peel the black radish and remove any remaining black spots. Grate the radish into small sticks. Sprinkle a little salt over the grated sticks and stir well. Peel and dice the shallot and add to the radish. Make a dressing from the remaining ingredients and add to the radish, mixing well. Let the salad marinate for 2-3 hours. Season again with the spices. Chop the chives or parsley and fold in. Serve with rustic farmhouse bread and liver sausage. The perfect snack for a guys’ night out.
