Ingredients for 3 servings:

  • 400 g salsify
  • 10 tbsp apple cider vinegar
  • 35 g ginger
  • 3 stalks of lemongrass
  • 6 tbsp sesame oil
  • 3 tbsp peanut oil
  • 1 tsp sea salt as needed

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Preheat the oven to 200°C (top/bottom heat). Line a baking dish with parchment paper. Peel the salsify under running water and cut into 5 cm pieces. Pour the apple cider vinegar into a large bowl, fill with water, and add the salsify. Peel and finely chop the ginger. Pound the lemongrass until it pops open and spread it on the bottom of the baking dish. Sprinkle the salsify on top. Mix the ginger, sesame oil, peanut oil, and sea salt together and spread it over the salsify. Bake everything in the oven for 20 minutes. Plate up and serve.
