Black salsify casserole with potatoes and meatballs

Ingredients for 3 servings:

  • 2 jars of salsify
  • 600 g minced meat, mixed
  • 200 g cheese, grated
  • 200 g ham, cooked
  • 2 onions
  • 1 egg(s)
  • 800 g potatoes
  • 1 cup of cream
  • salt and pepper
  • nutmeg
  • Breadcrumbs
  • 2 tbsp margarine
  • Paprika powder
  • 2 tbsp flour

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel the potatoes and boil in salted water until tender. Meanwhile, drain the salsify, dice the ham, and mix both together. Make a roux from the flour and margarine, gradually adding the water and cream, stirring constantly. Season with salt, pepper, and nutmeg and cook until the desired consistency is reached. Place the salsify and ham in a baking dish, pour the sauce over them, sprinkle with the cheese, and place in the oven at 180°C. Bake until the cheese melts and is golden brown. Meanwhile, place the minced meat in a bowl, mix well with the finely chopped onion, breadcrumbs, and egg. Season with salt, pepper, and paprika, form meatballs, and fry them in margarine until nicely browned on all sides. Arrange the potatoes on plates, top with the salsify, add the meatballs, and serve!
