Jam with nectarines, melon and red currants

Ingredients for 4 servings:

  • 600 g nectarine(s), skinned, pitted
  • 280 g honeydew melon(s), pulp weight
  • 120 g red currants, pureed
  • ½ lemon(s), juice
  • 10 ml whiskey or brandy
  • 1 tbsp honey
  • 1 kg gelling sugar 1:1

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the sugar in a tall saucepan, add the chopped nectarines, chopped honeydew melon, and the currant puree. Add the lemon juice, honey, and whiskey. Stir well, bring to a boil, and simmer for 4 minutes, stirring occasionally. This makes enough for 4-5 regular-sized jam jars.
