Blackcurrant jam

Ingredients for 2 servings:

  • 500 g currants, black
  • 500 g sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

simple recipe, without gelling sugar, as a cranberry substitute

Wash the blackcurrants and remove the stems. Place the berries in a large saucepan with an equal amount of sugar and boil for 3-5 minutes. Skim off any foam that forms. After 3 minutes, test for settling by placing a drop on a cold plate and checking whether the jam has set. Continue boiling, depending on the desired consistency. Immediately fill hot, piping hot jars into screw-top jars, seal, and turn upside down for 5 minutes. Note: Due to the high pectin content of the blackcurrants, the jam will set even without preserving sugar.
