Ingredients for 4 servings:
- 2 bunch radishes
- 50 g arugula
- 5 tbsp olive oil
- 1 tsp honey
- some lemon juice
- Salt
- Pepper, freshly ground
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Whisk together olive oil, honey, and lemon juice to make a marinade. Season with salt and pepper. Trim and chop the radishes. Chop the arugula a little, if desired. Mix the radishes, arugula, and marinade, taste again, and adjust the seasoning if necessary. Ladle into small glasses or bowls, garnish with arugula, and serve immediately. If the radish cocktail sits too long, the radishes will become too watery.
