Blitz Mayonnaise and Tartar Sauce without Egg

The perfect blitz mayonnaise and tartar sauce without egg recipe with a picture and simple step-by-step instructions.

Mayonnaise:

  • 100 ml Milk 3.5% (also long-life milk) at room temperature
  • 1 tbsp Mustard medium hot
  • 1 tsp struck Salt
  • 1 pinch Sugar
  • 1 tbsp Lemon juice
  • 250 ml Sunflower oil
  • Pepper White

Tartar sauce:

  • 50 g Mayonnaise
  • 70 g Sour cream
  • 1 tsp Mustard medium hot
  • 1 Tbsp easy. Chives rolls
  • 1 Tbsp easy. Finely chopped parsley
  • 25 g Pickled cucumber small, finely chopped
  • 1 tbsp Finely chopped capers
  • 1 tsp Lemon juice
  • 1 pinch Sugar
  • White pepper, optional salt

Mayonnaise:

  1. Put the milk, mustard, salt, a pinch of sugar and lemon juice in a narrow, tall container (ideally it should not be much larger than that of the hand blender). Then place the hand blender (please do not use the hand mixer hook!) In the container on the floor, switch it to the highest level and move it slowly up and down. When the mass starts to be creamy, gradually pour in the oil in small amounts. In the list of ingredients, the maximum amount stated is 250 ml. For me, however, the mayonnaise was so perfect at 175 ml that I didn’t have to use it all. So please determine for yourself whether 250 ml is necessary. When the mayonnaise has reached the desired consistency, season it to taste and add a little pepper. Since it does not contain a raw egg, it can be kept airtight and well chilled for approx. 1 – 2 weeks.

Tartar sauce:

  1. Finely chop the chives and parsley after washing. Drain the cucumber and capers, cut into small cubes and then chop a little more. Then stir in the mayonnaise, sour cream and mustard in a bowl, stir in the chives, parsley, cucumber and capers and season everything with lemon juice, pepper, salt and sugar.
  2. The tartar sauce goes well with fish, meat and perfect with jellied meat. Its shelf life is the same as that of mayonnaise.
  3. If you don’t have sour cream on hand, you can make do with sour cream or similar, and if you don’t like capers or have at home, you can take a little more of the cucumber.
  4. The above number of people for 6 servings applies to the mayonnaise. The tartar sauce is enough as a dip for 2 people.
