Why Pancakes Don’t Turn Out Puffy and Fluffy: The Most Common Mistakes

Fritters are the dish with which many housewives begin their acquaintance with dough. It is easy and quick to make pancakes, and the result is fantastic. But even such simple dough can be ruined if you don’t know a few important rules.

Why pancakes are soggy on the inside

Fritters turn out soggy if you fry them on very high heat. Then they burn on top but do not have time to bake inside. Ideal pancakes should be fried at medium heat close to a minimum and only under a lid.

Why do fritters fall?

Pancakes can fall over for several reasons. First, if the batter was too liquid. In this case, the situation can be corrected. Add some flour to the batter and your next pancakes will be denser.

To make brown fritters, you should heat a frying pan as much as possible, lightly grease it with vegetable oil, turn the heat down to a minimum and only then pour the batter into the pan. Fry the fritters under a closed lid.

The secret of fluffy fritters with kefir

The sourer your kefir, the more fluffy the pancakes will be. Also, note that fat kefir will make the batter more flavorful. For the pancakes to be fluffy, beat the eggs and sugar separately before adding the warm kefir to the batter.

To make fluffy flapjacks, add yeast to the kefir. You can use either dry or fresh yeast. Once the dough is ready, cover it with a towel and let it stand for at least an hour. Fritters made with kefir and yeast turn out puffy, very airy, and really resemble fluff.

Why are pancakes made with milk not fluffy?

Milk is not the best ingredient for this dish. The fact is that milk is ideal for making pancakes, but pancakes are like a sour environment. If you want to make puffy pancakes, you will need kefir or ryazhenka, but not milk. You will never make fluffy pancakes with milk.

If you do make your pancakes with milk and don’t want to back out, you can remedy the situation by adding a bag of dry yeast to the milk. Cover the dough with a towel and leave it in a warm place for an hour to let the yeast begin to work. These pancakes will be puffy. But keep in mind that yeast is the only way to make milk pancakes puffy.
