Ingredients for 1 servings:

  • 150 g flour
  • 100 g almond(s), grated
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 150 g sugar
  • 1 packet of vanilla sugar
  • some cinnamon, ground
  • 125 ml oil
  • 2 eggs
  • 150 g yogurt
  • 100 g blueberries, fresh or frozen
  • Almond flakes for sprinkling

Working time approx. 15 minutes; Total time approx. 15 minutes

super quick to make and nice and juicy

Grease a muffin tin or line it with paper baking cups. Combine the flour, almonds, baking powder, baking soda, sugar, vanilla sugar, and cinnamon in a bowl. Combine the oil, eggs, and yogurt in a second bowl and add to the other ingredients. Mix briefly with a wooden spoon. Add the blueberries and fold in. Spread the batter evenly in the muffin tin and sprinkle with flaked almonds. Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes. Makes 12 muffins.
