Blueberry Bacon Rolls

Ingredients for 4 servings:

  • 250 g blueberries
  • 200 g bacon, diced
  • 400 g wheat flour type 405
  • 1 packet of dry yeast
  • 1 tsp salt
  • 1 tbsp raw cane sugar
  • 1 tbsp apple cider vinegar
  • 260 ml water, lukewarm
  • n. B. Flour for the work surface and for sprinkling

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 30 minutes

Put the flour in a food processor. Then add the yeast, salt, and sugar and mix thoroughly. Add the water and vinegar to the mixture and knead for 5 minutes until you have a smooth dough. Roll out the dough on a floured surface. Spread the blueberries and bacon on the dough. Carefully fold the dough in on all sides. Divide the dough into 8 pieces and shape into balls. Line a baking sheet with baking paper. Place the rolls on the baking paper. Let the rolls rise for at least 30 minutes. Preheat the oven to 220 degrees Celsius. Sprinkle a little flour on the rolls and bake in the oven (bottom rack) for 30 minutes, then increase the oven to 200 degrees Celsius and bake for another 10 minutes. Tip: Serve lukewarm for breakfast on the weekend.
