Blueberry banana bread

Ingredients for 1 servings:

  • 5 bananas
  • 100 ml oat milk (oat drink)
  • 150 g oat flour
  • 1 packet of baking powder
  • 60 g walnuts
  • 40 g dates
  • 25 g almonds, chopped, optional
  • 150 g blueberries or blueberries

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

vegan, gluten-free

Preheat the oven to 180°C fan/convection oven. Mash the bananas and transfer them to a larger bowl. Then stir in the oat milk. Combine the flour and baking powder in a separate bowl and stir in. The batter should be relatively fluffy and not stiff. Then slightly crumble/chop the walnuts and chop the dates. Stir both into the batter along with the almonds. Finally, stir in the blueberries. Pour the batter into a baking dish lined with baking paper. Bake for about 30 minutes, until the top of the banana bread is lightly browned. Note: I used a brownie pan, but a 26cm springform pan should also work.
