Ingredients for 1 servings:

  • 50 g tiger nut flour
  • 25 g tapioca starch
  • 1 tsp. baking soda
  • 1 dashes lemon juice
  • 50 ml mineral water
  • 1 pear(s), ripe
  • e.g. maple syrup

Instructions

Working time approx. 3 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 13 minutes

Paleo, grain-free and vegan

Mix the tiger nut flour, tapioca starch, and baking soda in a bowl. Whisk in the lemon juice and mineral water, then fry the batter in hot coconut oil. Slice the pear and arrange it on the pancake. Drizzle with maple syrup. This pancake also tastes great with other fruits, such as stone fruits or berries.
