Boboti with apricots and raisins

Ingredients for 6 servings:

  • 1 kg minced beef
  • 2 large onions, finely chopped
  • 3 slice(s) white bread, torn into small pieces
  • ¼ liter of milk
  • 4 tbsp apricot jam
  • 5 tbsp mango chutney
  • 3 tsp lemon juice
  • 75 g raisins
  • 20 apricot(s), dried
  • 3 tbsp curry powder, mild
  • 2 tbsp turmeric
  • 3 tbsp almonds, chopped
  • 2 tsp herbs de Provence
  • 1 can of pizza tomatoes
  • 3 eggs
  • salt and pepper
  • 1 tbsp Worcestershire sauce
  • butter flakes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

South African main meal

Preheat the oven to 180 degrees Celsius. Soak the white bread in half of the milk. Chop the apricots and soak them in water. Brown the minced meat and season with salt, pepper, and 2 tablespoons of curry powder. Add the onions and sauté until translucent. Stir the remaining ingredients, except for the eggs, milk, lemon juice, and butter, into the minced meat and place in a greased baking dish. Drizzle with lemon juice or top with lemon slices. Whisk the eggs and the remaining milk and pour over the mixture. Sprinkle with the butter flakes. Bake in the oven at 180 degrees Celsius for 45 minutes. Serve with saffron rice.
