Baked pecan pears with saffron cream cheese frosting

Ingredients for 4 servings:

  • 2 pear(s), not so hard
  • 100 g pecans
  • 2 eggs
  • 3 tbsp maple syrup
  • ½ g saffron
  • 5 tbsp milk
  • 100 g cream cheese
  • 2 packets of vanilla sugar
  • some mint leaves

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Roughly chop the pecans and toast them lightly in a dry pan. Halve the pears and core them. Cut a small base on the bottom to prevent the pears from tipping over on the baking sheet. Separate the eggs. Mix the egg yolks with the cooled nuts. Beat the egg whites until stiff and stir them into the nut mixture with the maple syrup. Spread the mixture generously over the pear halves and bake in the oven on the bottom rack at 180°C for about 20 minutes. Mix together the cream cheese, milk, vanilla sugar, and saffron. When the pears are done, spread the mixture over the pear halves, garnish with a few mint leaves, and serve.
