Ingredients for 25 servings:
- 3 eggs
- 1 cube of yeast
- 3 tbsp sugar
- 1 tbsp salt
- 1 jar of oil (Turkish tea glass)
- ⅛ jar water (Turkish tea glass)
- 1 kg flour
- 1 packet of baking powder
- 1 sheep’s cheese (e.g. Gazi, 55% fat)
- 1 tbsp parsley, chopped

Turkish sheep cheese parcels
Separate the eggs. Place the egg whites in a bowl. Whisk the egg yolks in a small bowl and set aside. Add the milk to the egg whites in the bowl and crumble in the yeast cube. Add the sugar, salt, oil, and water and mix all ingredients together. Gradually knead in the flour and baking powder until a soft dough forms. Cover the dough and let it rise for about 45 minutes. During this time, prepare the filling. Mash the feta cheese with a fork and add finely chopped parsley (or frozen parsley) and mix. Form the finished dough into about 25-30 small balls. Roll out the balls or flatten them with your hands, fill them with feta cheese, fold them over, and press down firmly. Brush with egg yolk. Bake the parcels in the oven at 200°C for about 20-25 minutes until golden brown.
