Bohemian onion soup

Ingredients for 4 servings:

  • 500 g onion(s)
  • 1 tbsp lard
  • 1 tsp sugar
  • 1 tbsp, heaped flour
  • 1 ½ liters of beef broth
  • n. B. Salt
  • n. B. Pfeffer
  • 1 pinch of caraway powder
  • 4 tbsp, heaped cheese, grated
  • 40 g baking peas
  • e.g. parsley, chopped
  • n. B. chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

traditional Czech/Bohemian dish

Peel, halve, and thinly slice the onions. Heat lard in a saucepan, reduce the heat, and add the halved onions and sugar. Sauté over low heat for about 8 minutes, stirring frequently. Dust with flour, stir through, cook for 2 minutes while stirring, and then pour in the cold broth. Season with pepper and caraway seeds and simmer for about 15 minutes until softened. Season with salt to taste. Place the grated cheese in the center of the plate or soup bowl. Pour in the hot soup and top with the garden peas and herbs. Serve immediately. The soup is suitable as a light supper or as a starter.
