Potato soup with meatballs

Ingredients for 6 servings:

  • 2 liters of water
  • 500 g minced meat
  • 6 potatoes
  • 2 carrots
  • 2 onions
  • oil
  • salt and pepper
  • e.g. parsley
  • n. B. Dill

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

easy and quick to prepare

First, season the minced meat with salt and pepper and form into small balls. Peel the potatoes and cut into small cubes. Bring the water to a boil, add salt, and add the potatoes. While the potatoes are cooking, peel and finely chop the onions. Peel and dice the carrots as well. Heat oil in a pan and sauté the onions for about 2 minutes until translucent. Add the diced carrots and sauté for another 4 minutes, stirring frequently. Add the vegetables and meatballs to the pot. Once the soup has returned to a boil, simmer for another 10-15 minutes. If desired, add fresh herbs.
