Boiled beef in dill sauce

Ingredients for 4 servings:

  • 1 kg beef with bone (rib or loin)
  • 2 large carrots
  • 1 parsley root(s)
  • 1 stalk(s) leek
  • 1 large onion(s)
  • ½ celeriac
  • 2 bay leaves
  • 8 peppercorns
  • 3 liters of water (salt water)
  • 250 ml cream
  • 100 ml broth
  • 2 egg yolks
  • 1 tbsp dill, chopped
  • Salt

Wash the meat, place it in boiling salted water, add the spices, and cook over moderate heat. Peel and wash the vegetables. Peel and halve the onion, then fry it in a hot pan. Add it to the broth and cook with the meat. For the sauce, make a roux of butter and flour, deglaze with a little broth, and cook, stirring constantly, until thickened. Add the cream mixed with the egg yolk, the dill, and salt. Heat the sauce without boiling. Cut the cooked meat into slices or pieces (do not remove the bones), arrange on a platter, and garnish with vegetables from the broth. Mashed potatoes or savoy cabbage go well with this dish. Serve the sauce separately.
