Ingredients

  • 1,2 kg Beef boiled beef
  • 1 Carrot
  • 1 Celeriac fresh
  • 1 Fresh onion
  • 3 Juniper berries
  • 2 Bay leaf
  • 2 Cloves
  • 1,5 L Water -cold-
  • Salt from the mill
  • Pepper from the grinder

BOUILLON POTATOES

  • 500 g Diced potatoes
  • 3 Carrots
  • 1 Poree -Leek-
  • 1 Celery root
  • 1 Onion
  • 10 Snow peas - I still had - peas go too ...
  • 1 L Meat broth or vegetable broth
  • Chopped parsley
  • Marjoram
  • Pepper and salt from the mill

SWEDISH SAUCE

  • 4 tbsp Applesauce
  • 2 tbsp Lion mustard
  • 2 tbsp Cream of horseradish
  • 4 tbsp Kitchen cream 30%
  • 2 tbsp Mayonnaise -possibly-

GREEN BEANS

  • 700 g Green beans
  • 2 Garlic cloves
  • Salt and pepper from the mill
  • 2 cups Water -cold-

DECO: mini tomatoes

  • 4 panicles Mini tomatoes

Instructions

  • Rinse the beautiful piece of beef under running water and place in a saucepan, then add cold water. The halved onion is each "peppered" with a bay leaf and a clove ... add a few "squashed" juniper berries .... A little salt and pepper from the mill put the pot ..... then put it on (just not simmering) - you can strain the gray foam or not - this protein will later sink to the bottom .... depending on the size of the piece of meat - let it simmer for about 2 hours - then remove from the brew and cut into slices (against the fiber)

BOUILLON POTATOES

  • Peel the potatoes and cut into small (not too small!) Cubes / pieces, as well as the carrots, celeriac, the leek in rings, quarter the onion, third the snow peas - peas also go in (TK - add later) Put on cold water / vegetable stock. With water, add some salt and pepper from the mill - simmer gently for about 25 - 30 minutes - just before the end of preparation, add some marjoram and freshly chopped parsley ...

SWEDISH SAUCE (cold)

GREEN BEANS

  • Clean the beans (cut off both ends) and wash them briefly ... then put them in a saucepan with a little water - add the garlic in thin slices (you can also rub the inside of the saucepan with the garlic beforehand) A little salt and pepper. ... approx. 8 - 12 minutes ... depends on the amount of beans ...

DECO

  • Due to lack of time, the plate was not decorated in a great way - only a panicle of mini tomatoes was added! You can also add beetroot slices and pickles!
