Ingredients for 1 servings:

  • 250 ml corn flour (Farinha de Fubá)
  • 250 ml wheat flour
  • 500 ml sugar (can be a little less)
  • 250 ml oil or margarine
  • 250 ml yogurt
  • 1 tbsp, leveled baking powder
  • 4 eggs, separated
  • powdered sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Corn cakes from Brazil

Beat the egg whites until stiff peaks form and gradually add the egg yolks. Mix all the other ingredients until a smooth batter forms. Bake in a greased and floured pan preheated to 180°C for about 45 minutes. Then let cool and sprinkle with powdered sugar, if desired. This recipe is typical in Brazil and a must at every party there, just like brigadeiros. Note: I always use a 250 ml cup for measuring.
