Banana cake from Colombia

Ingredients for 1 servings:

  • 3 banana(s), ripe
  • 1 egg(s)
  • 5 tbsp wheat flour
  • some oil for the pot

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Torta de platano – Preparation in a saucepan

Mash the bananas finely with a fork. Mix with the egg and gradually add the flour until smooth. Transfer the batter to a lightly oiled, small saucepan. Cover and set on the stove at low heat (electric stove level 1) for 30-35 minutes. Then remove the lid for about 10 minutes to allow excess liquid to evaporate and the cake to firm up a bit. The knife test works here too: when nothing sticks to the knife, the cake is done. Turn it out (it worked for my host mom in Colombia, but somehow never for me) or remove pieces from the pan. Serve fresh, preferably while still warm. Tastes simply heavenly with a cup of dark cocoa!
