Ingredients for 1 servings:

  • 300 g flour, wheat flour or wholemeal wheat flour, sifted
  • 1 ½ tsp baking powder
  • 1 tbsp cinnamon, ground
  • ½ tsp clove(s), ground
  • 6 eggs, separated
  • 125 g sugar, fine or 100 g tightly packed brown
  • 1 orange(s), grated peel, untreated
  • 250 ml olive oil
  • 375 g honey, dark
  • 60 ml schnapps (brandy)

»Spoiled Cake« Honey Cake

Preheat the oven to 180°C. Butter a 25cm springform pan. Sift the flour, baking powder, cinnamon, and clove powder into a bowl. In another bowl, beat the egg yolks and sugar with an electric mixer on high speed until thick, light yellow. Stir in the orange zest and, while continuing to beat, slowly drizzle in the oil. Gradually add the honey and brandy, beating until creamy and smooth. Finally, carefully fold in the flour mixture in three batches on low speed. Beat the egg whites until stiff peaks form. Fold the beaten egg whites evenly into the batter and pour the batter into the prepared pan. Bake the cake in the oven for 45-50 minutes. Cool the cake in the pan on a wire rack for 15 minutes. Use a knife to loosen the ring from the pan and lift it off. Allow to cool. Arrange the cake on a platter and slice before serving.
